Pumpkin Week in Room 7 will start with reading about this mysterious squash.  Is it a fruit?  Or is it a vegetable?  The jury is still out.  What we will learn is that pumpkins make great tasting muffins!  With the help of our cooking moms, the kids will use their math skills to measure and make a pumpkin muffin recipe.   As the week goes on, we will create our own pumpkin baskets, make pumpkin blankets, weigh, measure and draw pumpkins.  Who knew so much learning and so much fun could come from this often underappreciated vegetable (or is it a fruit)?

2 teaspoons baking power
1/4 teaspoon baking soda
1/2 cup firmly packed light brown sugar
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/2 cup raisins (optional)
1 cup pumpkin puree
2 eggs
1/2 cup milk
1/4 cup melted butter

1.  Preheat oven to 400 degrees.  Butter muffin tins
2.  Sift the flour, baking powder, soda, brown sugar salt, cinnamon and nutmeg together into a large bowl.  Stir in the raisins and set aside.
3.  Put the pumpkin puree in a separate bowl and beat in the eggs, milk and butter.  Fold into the flour mixture until the batter is just combined.
4.  Divide the batter among 12 muffin cups, filling each one about 2/3 full.  Bake in the middle of the oven for 25-30 minutes until well risen and golden brown.  A skewer inserted into the center should come out clean.  Cool for a few minutes then transfer to a wire rack.

Preparation time: 10 minutes
Cooking time: 30 minutes per batch
